Pilaki
(cold white beans vinaigrette)
Pilaki is a Turkish meze which is a bean dish cooked in olive oil, served
cold with lemon.
Soak 250 gr Kuru fasulye (white beans-haricot beans-navy beans) overnight.
The next morning drain off the water and put the beans at boiling water,
at which 2 dessertspoonful of sodium bicarbonate was added, and let boil
for 4-5 minutes and drain again. Sauté one big chopped onion lightly
in olive oil. Dice one small celery root and one medium-sized carrot; add
some leaves and stalks of the celery, salt, tomatoes or tomatoes purée
and cook together with the beans.
Dress with parsley and serve cool.
